Instructions

Marinating the Chicken

  • In a medium bowl, combine the olive oil, dried oregano, garlic powder, salt, and pepper.
  • Place the chicken thighs in the bowl, making sure to coat them thoroughly in the marinade.
  • Cover the bowl with plastic wrap and let the chicken marinate for at least 30 minutes, or refrigerate for up to 4 hours.

Cooking the Chicken

  • Heat a skillet over medium-high heat.
  • Add the marinated chicken thighs (discarding any extra marinade) to the skillet.
  • Sear the chicken for 5-7 minutes on each side, until golden brown and cooked through, reaching an internal temperature of 165°F.
  • Remove the chicken from heat and let it rest for a few minutes before slicing.

Preparing the Tzatziki

  • In a mixing bowl, combine the plain Greek yogurt, crumbled feta cheese, lemon juice, minced garlic, and a dash of salt and pepper.
  • Mix everything until the sauce is smooth and creamy, adjusting the seasoning if necessary.

Assembling the Gyros

  • Take a pita bread and spread a generous layer of tzatziki sauce in the center.
  • Layer with sliced chicken, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
  • Roll the pita tightly around its fillings, securing everything in place.
  • Serve with a sprinkle of fresh parsley for a touch of color and freshness.

Notes

For extra flavor, try using a combination of fresh herbs like parsley and oregano. You can use a pre-made tzatziki sauce for quicker prep. Feel free to double the marinade ingredients for faster dinner prep.
