Ingredients
  

For the Crust

  • 1.5 cups graham cracker crumbs Crunchy and slightly sweet.
  • 0.25 cups granulated sugar Adds sweetness to the crust.
  • 0.5 cups melted butter Binds the crust together.

For the Cheesecake Filling

  • 16 oz cream cheese (softened) The star of the cheesecake filling.
  • 1 cups powdered sugar Perfects the texture of the filling.
  • 1 tsp vanilla extract Elevates the flavors.
  • 1 tbsp lemon juice Balances the sweetness.
  • 1 cups heavy whipping cream (whipped to stiff peaks) Provides a frothy texture.

For the Blueberry Topping

  • 2 cups fresh or frozen blueberries Juicy and bursting with flavor.
  • 0.25 cups granulated sugar Sweetens the blueberry sauce.
  • 1 tbsp cornstarch mixed with 2 tbsp water Thickens the blueberry sauce.
  • 1 tsp lemon juice (for topping) Enhances the blueberry flavor.

Instructions
 

Make the Crust

  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until they form a sandy mixture. Press this blend evenly into the bottom of a springform pan. Refrigerate for about 10-15 minutes to allow it to set firmly.

Prepare the Cheesecake Filling

  • Using an electric mixer, beat the softened cream cheese until it reaches a velvety consistency. Gradually add the powdered sugar, vanilla extract, and lemon juice, mixing until well combined.
  • In a separate bowl, whip the heavy cream until it achieves stiff peaks. Gently fold the whipped cream into the cream cheese mixture until no streaks remain.
  • Pour this luscious filling over the cooled crust and smooth the top with a spatula.

Make the Blueberry Topping

  • In a saucepan over medium heat, combine the blueberries, granulated sugar, and lemon juice. Let the mixture simmer, stirring occasionally, until the blueberries begin to soften and release their juices.
  • Stir in the cornstarch slurry and continue cooking until the mixture thickens and becomes glossy. Once done, remove from heat and allow it to cool for a few minutes before pouring it over the cheesecake layer.

Assemble & Chill

  • Carefully cover the springform pan with plastic wrap and refrigerate for at least 4 hours, or overnight for the best flavor development.
  • Once chilled, release the sides of the springform pan and cut into slices to serve.

Notes

For best results, soften your cream cheese and ensure the heavy cream is whipped to stiff peaks. Allow enough chill time for the cheesecake to set properly.
