Instructions
 

Preparation

  • Roughly chop the pecans and measure out the dried cranberries and rolled oats.
  • In a medium saucepan, combine the sugar, unsalted butter, and heavy cream. Place over medium heat, stirring frequently until the butter melts.
  • Stir for about 2-3 minutes until the mixture bubbles and thickens slightly.
  • Remove from heat and stir in the vanilla extract and salt.
  • Add the chopped pecans and dried cranberries; mix thoroughly.
  • Gently fold in the rolled oats until evenly coated.

Assembly

  • Line a baking sheet with parchment paper.
  • Drop mounds of the mixture onto the parchment paper, leaving about an inch between each mound.
  • Let cool for 30-40 minutes at room temperature or refrigerate to speed up the process.
  • Once set, enjoy the cookies and store any leftovers in an airtight container.
