Instructions

Preparation of the Crust

  • Press this mixture firmly into the bottom of a 9-inch springform pan, using the back of a measuring cup to create an even layer.

Setting the Crust

  • Place the crust in the fridge to chill for about 15-20 minutes.

Making the Filling

  • In a large bowl, beat the softened cream cheese and granulated sugar together using an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  • Add the lemon juice, lemon zest, and vanilla extract to the cream cheese mixture. Mix until thoroughly combined.
  • Gently fold the whipped cream into the cream cheese mixture using a spatula.

Assembling the Cheesecake

  • Pour the cheesecake filling over the chilled crust, spreading it evenly.
  • Drizzle the raspberry puree over the filling and gently swirl it into the cheesecake using a toothpick or skewer.

Chilling

  • Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Finishing Touches

  • Carefully remove the cheesecake from the springform pan and garnish with fresh raspberries and lemon slices before serving.
