Preparation

  • Preheat your oven to 375°F (190°C) and grease a standard muffin tin.
  • In a medium saucepan over medium heat, melt the butter and pour in the milk. Allow it to come just to a gentle boil.
  • Quickly add the flour all at once to the boiling mixture. Stir vigorously until the dough pulls away from the sides of the pan and forms a ball.
  • Remove from heat and let the mixture cool for about 5 minutes.
  • Add the eggs one at a time, beating well after each addition until the batter is smooth and glossy.
  • Stir in the sugar and salt, integrating them fully into the mixture.
  • Spoon the batter evenly into the muffin cups, filling each about halfway.

Baking

  • Bake for 30-35 minutes or until golden brown and puffed.
  • Serve warm, drizzled with honey or a light dusting of powdered sugar.

Notes

Ensure not to open the oven while baking to prevent deflation. Use room temperature eggs for emulsification.
