Preparation

  • Place the chopped white chocolate in a sealable container.
  • In a small saucepan, combine the unsalted butter and orange zest. Heat over medium heat for about 1 minute.
  • Carefully pour in the heavy whipping cream and cook for an additional 1-2 minutes until small bubbles form.
  • Pour the butter and cream mixture over the chocolate, using a strainer to catch the zest.
  • Let sit for about 1 minute, then add orange extract and optional food coloring.
  • Whisk until the mixture is mostly melted and smooth.
  • Transfer the mixture to the freezer and chill for about 1 hour or until firm.

Shaping

  • Once firm, scoop out about 1 tablespoon of the mixture and roll into a ball using your palms.
  • Roll the truffle in powdered sugar until fully coated.
  • Chill for an additional hour before serving.
