Preparation

  • Let the peanut butter come to room temperature for easier mixing.
  • In a large mixing bowl, combine rolled oats, ground flaxseeds, and mini chocolate chips. Stir gently to blend the dry ingredients together.
  • Add the creamy peanut butter and maple syrup to the mixture. Gently mix until the batter holds together.
  • With your hands, form the mixture into 1-inch balls, yielding about 15-16 energy balls.
  • Refrigerate the formed balls for at least 30 minutes to firm up.

Notes

Store energy balls in the fridge for up to one week. You can also freeze them for up to three months.
