Ingredients
  

For the filling

  • 1 large onion, thinly sliced About 150g.
  • 1 ripe pear, cored and thinly sliced Approximately 150g.
  • 1 medium apple, cored and thinly sliced Approximately 150g.
  • 8 slices whole grain bread Or your preferred choice, approximately 400g.
  • 8 ounces sharp cheddar cheese, grated Approximately 225g.
  • 4 ounces Brie cheese, sliced Approximately 115g.
  • 2 tablespoons unsalted butter, melted For cooking.
  • Salt and pepper to taste Enhances overall flavor profile.

Instructions
 

Caramelizing the Onions

  • Heat 1 tablespoon of butter in a skillet over medium heat.
  • Add the thinly sliced onions and a pinch of salt.
  • Cook slowly, stirring occasionally, until the onions turn golden and caramelized, about 15 minutes.
  • Remove from heat and set aside to cool slightly.

Assembling the Sandwiches

  • Lay out 4 slices of bread on a clean surface.
  • Spread a generous layer of grated sharp cheddar cheese evenly across each slice.
  • Layer the thinly sliced pear and apple on top of the cheddar.
  • Place a few slices of Brie cheese on top of the fruits.
  • Spoon the caramelized onions evenly over the Brie layer.
  • Top with an additional layer of sharp cheddar cheese.
  • Place the remaining 4 slices of bread over the top to create the sandwiches.

Cooking the Sandwiches

  • Melt the remaining tablespoon of butter in the skillet over medium heat.
  • Carefully place the assembled sandwiches in the skillet.
  • Cook each sandwich for about 4-5 minutes on each side, or until golden brown and the cheese has melted.
  • Once done, remove the sandwiches from the skillet and cut in half if desired.

Notes

Serve alongside a light salad for lunch or with tomato soup for dinner. Great for family gatherings or casual brunches.
