Preparation

  • Start by enhancing your dish with delicious toppings. Cook the prosciutto or pancetta in a pan until crispy, then set aside.
  • Halve the cherry tomatoes, tear the mozzarella or burrata into pieces, and toast the pine nuts until fragrant and golden brown.

Cooking

  • Place a skillet over medium heat and add the good olive oil.
  • Carefully crack the eggs into the hot skillet. Cook until the whites are fully set, about three minutes.
  • Once the eggs are ready, spoon generous amounts of basil pesto around the eggs and season with salt, freshly cracked pepper, and optional red pepper flakes.
  • While the eggs are still in the pan, add your prepared toppings and let the heat slightly melt the cheeses.

Serving
