Ingredients

  • 1 box Yellow Cake Mix This will serve as the fluffy canvas for your cake.

For the Pineapple Filling

  • 20 oz Crushed Pineapple (with juice) Adds a tropical sweetness and a juicy burst.
  • 1 cup Granulated Sugar Sweetens the cake and filling.
  • 1/4 cup Cornstarch Aids in thickening the pineapple filling.

For the Frosting

  • 8 oz Cream Cheese (softened) Provides a rich and creamy layer.
  • 1/2 cup Powdered Sugar Lightens the cream cheese mixture.
  • 8 oz Whipped Topping (like Cool Whip, thawed) Makes the frosting airy and light.

For Garnishing

  • 1/2 cup Toasted Coconut Flakes Adds texture and toasty flavor.
  • Additional Whipped Cream (optional, for garnish) For an extra creamy touch on top.

Instructions
 

Preparation

  • Preheat the oven according to the cake mix box instructions.
  • Prepare the yellow cake mix as per package instructions and divide evenly between two 9-inch round pans.
  • Bake until golden brown and a toothpick inserted comes out clean.
  • Allow the cakes to cool for 10–15 minutes before transferring them to wire racks to cool completely.
  • Once cool, slice each cake in half horizontally to create four equal layers.
  • In a medium saucepan, combine crushed pineapple (with juice), granulated sugar, and cornstarch over medium heat. Stir constantly until thickened.
  • Allow pineapple filling to cool before assembly.
  • In a mixing bowl, beat softened cream cheese and powdered sugar until smooth. Fold in whipped topping to create a creamy frosting.

Assembly

  • Begin by placing one cake layer on a plate, spread with a layer of the cream mixture, then add a layer of pineapple filling. Repeat this process and finish with pineapple filling on top.
  • Frost the sides with the remaining cream mixture and sprinkle toasted coconut over the top and sides.
  • optionally add whipped cream on top for extra indulgence.
  • Chill the cake for at least 2 hours before serving.

Notes

For best results, preheat your oven fully before baking, and chill the cake after assembly. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
