Ingredients
  

For the cake

  • 1 box Angel food cake mix Light and airy, providing a wonderful base for the cake.
  • 1 box (3.4 oz) Pistachio pudding mix Rich and nutty, adding depth to the flavor.
  • 3 large Eggs Ensuring a tender and fluffy texture.
  • 1 can (20 oz) Crushed pineapple with juices Sweet and juicy, imparting tropical goodness.
  • 1/2 cup Vegetable oil For moisture and richness.

For the frosting

  • 1 tub (8 oz) Cool Whip, thawed Light and fluffy, perfect for the creamy frosting.
  • 1 box (3.4 oz) Pistachio pudding mix Enhancing the nutty flavor.
  • 2/3 cup Whole milk To create a smooth and creamy frosting.
  • to taste Chopped pistachios For decoration, adding a crunchy texture.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13 baking dish.
  • In a large bowl, combine the angel food cake mix, pistachio pudding mix, vegetable oil, eggs, and crushed pineapple (juices included). Beat until smooth and velvety.

Baking

  • Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until a toothpick comes out clean.

Frosting

  • While the cake is baking, prepare the frosting by mixing the pistachio pudding mix with the whole milk until thickened. Gently fold in the thawed Cool Whip.
  • Once the cake is cooled, frost it generously with the pistachio frosting.

Serving

  • Refrigerate the frosted cake for at least 2 hours before serving. Just before serving, sprinkle chopped pistachios over the top.

Notes

Ensure eggs and Cool Whip are at room temperature for easier mixing. Do not skip greasing the baking dish and allow the cake to cool completely before frosting. It can be made ahead of time and frosted a day in advance.
