Ingredients
  

Cheesecake Mixture

  • 8 oz cream cheese, softened Softened to avoid lumps
  • 1/2 cup heavy cream, whipped Whipped to soft peaks
  • 1/3 cup powdered sugar Adds sweetness
  • 1/3 cup pistachio paste Can substitute with finely ground pistachios
  • 1/2 teaspoon vanilla extract Infuses warmth
  • 1/2 teaspoon gelatin powder + 1 tbsp water Optional for firmer cheesecake

Raspberry Sauce

  • 1/2 cup fresh or frozen raspberries Bursting with tartness
  • 2 tbsp sugar Balances tang
  • 1/2 teaspoon cornstarch + 1 tbsp water Thickens the sauce
  • 1 teaspoon lemon juice Enhances flavor

Crust

  • 1/2 cup crushed graham crackers or digestive biscuits For the base
  • 2 tbsp melted butter Binds the crust

Garnishes

  • 1 tbsp crushed pistachios For extra crunch
  • Crushed pistachios for garnish As desired
  • Fresh raspberries for garnish As desired
  • White chocolate glaze or powdered sugar Optional for an elegant finish

Instructions
 

Prepare Raspberry Sauce

  • In a small saucepan over medium heat, combine raspberries, sugar, and lemon juice. Stir until the raspberries break down and release their juices.
  • Mix cornstarch with water and add it to the raspberry mixture. Cook for about 2 minutes until slightly thickened. Let it cool.

Make Cheesecake Mixture

  • In a mixing bowl, beat cream cheese, pistachio paste, powdered sugar, and vanilla extract until smooth and creamy.
  • If using gelatin, stir it in after blooming it in a bit of water.
  • Gently fold in the whipped cream until fully incorporated.

Assemble

  • Fill silicone molds halfway with the cheesecake mixture, then add a spoonful of the cooled raspberry filling. Cover with more cheesecake mixture.
  • Freeze for 4-6 hours until set.

Prepare Crust

  • Mix crushed biscuits, melted butter, and crushed pistachios until combined. Press mixture onto a tray.

Finish Cheesecake

  • Once cheesecake domes are set, gently unmold onto biscuit bases. Garnish with extra crushed pistachios and fresh raspberries.

Tips include ensuring cream cheese is softened, using gelatin for a firmer cheesecake, and allowing adequate chilling time.
