Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, beat the softened butter with powdered sugar until creamy and fluffy.
  • Add the almond extract and mix well.
  • In a separate bowl, whisk together the flour and salt, then gradually mix into the wet ingredients until a dough forms.
  • Shape tablespoon-sized amounts of dough into balls, pressing a thumbprint in the center of each.
  • Spoon raspberry jam into the thumbprint and seal the edges.

Baking

  • Place the cookies on a baking sheet lined with parchment paper.
  • Bake for 15-20 minutes until lightly golden.
  • Once cooled, dust with additional powdered sugar.
