Raspberry & White Chocolate Tartlets

Ingredients
  

For the crust

  • 1 1/4 cups all-purpose flour Provides a tender base for our tartlets.

  • 1 large egg yolk Binds the dough while contributing to its richness.
  • 2 tablespoons ice water Helps form the dough without heating it up unnecessarily.

For the filling

  • 1/2 cup raspberry jam Introduces a pop of tart sweetness.
  • 2 cups white chocolate, chopped Brings smoothness and indulgence to the filling.
  • 1 cup heavy cream Enriches the filling for a creamy consistency.

For the garnish

  • 1/2 cup shelled pistachios, roughly chopped Offers a satisfying crunch and a beautiful garnish.
  • Fresh raspberries Adds a fresh, vibrant touch that enhances presentation.

Instructions
 

Preparation

  • In a food processor, combine the flour and sugar. Pulse to mix them evenly.
  • Add the chilled butter and pulse until the mixture resembles coarse crumbs.
  • In a small bowl, mix the egg yolk and ice water. Drizzle over the flour mixture and pulse until a dough forms.
  • Press the dough into tartlet pans. Prick the bases with a fork to prevent bubbling, cover, and chill for 30 minutes.

Baking

  • Preheat your oven to 375°F (190°C). Bake the tart shells for 12-15 minutes or until golden brown.
  • Allow them to cool completely on a wire rack.

Filling

  • Spread a layer of raspberry jam over the bottom of each shell.
  • Melt the white chocolate using a double boiler, stirring until smooth. Remove from heat and whisk in the heavy cream until combined.
  • Pour the white chocolate mixture over the raspberry jam layer in each tart shell, filling them to the top.
  • Refrigerate until the filling is set, about 2 hours.

Finishing

  • Just before serving, sprinkle with chopped pistachios and add fresh raspberries.

Notes

Ensure the butter is cold, and chill the filled tartlets for optimal texture. For variations, use whole wheat flour or substitute different berries.
