Instructions
 

Prepare the Crust

  • Combine the chocolate cookie crumbs and melted butter in a bowl. Mix until evenly coated and resembles wet sand.
  • Press the mixture firmly into the bottom of a springform pan to form a solid crust base.

Make the Filling

  • In a large bowl, mix the softened cream cheese and sugar until smooth and creamy.
  • Gradually whisk in sour cream and vanilla extract until fully incorporated.
  • Add eggs one at a time, mixing well after each addition to ensure a light texture.
  • Fold in the creamy peanut butter and chopped Reese's cups until evenly distributed.

Bake the Cheesecake

  • Pour the creamy filling over the prepared crust in the springform pan.
  • Bake in a preheated oven at 325°F for about 50-60 minutes or until the center is slightly wobbly.

Chill and Prepare Ganache

  • Allow the cheesecake to cool at room temperature, then transfer to the refrigerator. Chill for at least 4 hours or ideally overnight.
  • For the ganache, heat heavy cream in a saucepan until boiling, then pour over chocolate and peanut butter chips in a bowl. Stir until smooth.

Serve the Cheesecake

  • Once fully chilled, carefully release the cheesecake from the springform pan onto a serving plate.
  • Drizzle the ganache over the cheesecake and garnish with extra Reese's cups and whipped cream.

Ensure cream cheese is softened to room temperature. Avoid overmixing and skipping the chilling time for best results.
