Preparation

  • Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper. Lightly grease the paper.
  • In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt.
  • In a large mixing bowl, beat the eggs and granulated sugar on high speed for about 5 minutes until thick and frothy. Add in the milk and vanilla extract.
  • Gently fold the dry ingredients into the wet ingredients using a spatula.
  • Pour the batter into the prepared pan and spread it to the edges. Bake for 10-12 minutes, until the cake springs back when touched.

Rolling and Filling

  • While the cake is still warm, gently roll it up in a clean kitchen towel dusted with powdered sugar and allow it to cool completely.
  • In a bowl, beat together the peanut butter, powdered sugar, and heavy cream until smooth.
  • Carefully unroll the cooled cake, spread the peanut butter filling, and sprinkle chopped Reese’s Peanut Butter Cups on top. Re-roll the cake gently.
