For the cornbread topping

  • 1 box (8.5 oz) cornbread mix Ensuring a fluffy, easy topping.
  • 1 large egg To bind the cornbread mix together.
  • 1/3 cup milk Providing moisture and tenderness.
  • 2 tbsp melted butter Adding richness to the cornbread.
  • 1 cup shredded cheddar cheese Melting beautifully on top.
  • 1/4 cup corn kernels (optional) For a sweet, juicy bite.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and grease a 9"x13" baking dish.
  • In a large skillet over medium-high heat, brown the ground beef for about 6-8 minutes until fully cooked.
  • Add the diced onion and bell pepper, sautéing for 5 minutes until they’re softened and fragrant.
  • Stir in the minced garlic and cook for another minute.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, apple cider vinegar, chili powder, and smoked paprika. Let it simmer for about 10 minutes.

Assembly

  • Spread the Sloppy Joe mixture evenly in the prepared baking dish.
  • In a separate bowl, whisk together the cornbread mix, egg, milk, and melted butter until well combined.
  • Fold in the shredded cheddar cheese and corn, if using.
  • Dollop the cornbread batter over the Sloppy Joe mixture.

Baking

  • Bake for 20-25 minutes until the cornbread is golden brown and a toothpick inserted in the center comes out clean.
  • Let the casserole cool for 10 minutes before serving.

Notes

This dish can be made ahead of time and frozen for up to three months. Allow it to cool, then cover tightly and freeze. Reheat in the oven.
