Preparation

  • Preheat your oven to 350°F (175°C). Grease and line a 9-inch Bundt or ring-shaped pan with parchment paper.
  • In a mixing bowl, combine the softened butter and dark brown sugar. Beat until fluffy and light.
  • Add the eggs one at a time, mixing well after each addition. Stir in the molasses and vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, ground ginger, cinnamon, cloves, nutmeg, and salt.
  • Gradually add the dry mixture to the wet ingredients, alternating with the buttermilk. Mix until just combined.
  • Stir in the baking soda.
  • Pour the batter into the prepared pan and smooth the top.

Baking

  • Bake for 35 to 40 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Whipping Cream & Decoration

  • In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Once the cake is cooled, pipe the whipped cream around the edges of the wreath.
  • Decorate with cinnamon sticks, star anise, candied ginger, and fresh rosemary. Dust with powdered sugar before serving.

Notes

Use room temperature ingredients for proper mixing. Chill your bowl and beaters for whipping cream. Be patient; allow your cake to cool completely before frosting.
