Preparation

  • Peel the cucumbers if desired; slice them into thin rounds for even marination.
  • In a large mixing bowl, combine the cucumber slices.
  • In a separate bowl, whisk together the lime juice, chili powder, tajín, sea salt, sugar, and cayenne pepper until well blended.
  • Pour the marinade over the cucumbers and toss to coat each slice.
  • Add cilantro and olive oil, mixing to ensure every cucumber is coated.

  • Cover and refrigerate for at least 30 minutes or up to 2 hours.
