Preparation

  • Rinse the rice under cold water until the water runs clear.
  • In a saucepan, bring the rinsed rice and 2 cups of water to a boil. Lower the heat, cover, and let simmer for 18 minutes.
  • While the rice cooks, mix the rice vinegar, sugar, and salt until dissolved.
  • Once the rice is cooked, fold in the vinegar mixture gently and let cool.
  • Mash the avocado with fresh lime juice and a sprinkle of salt.
  • Slice the cucumber into thin pieces, sprinkle with salt, and let drain before patting dry.
  • In a bowl, combine cooked shrimp with mayonnaise and sriracha, mixing until well-coated.

Assembly

  • Using a mold, layer the rice first, followed by creamy avocado, crisp cucumber, and shrimp mixture.
  • Press gently to hold everything together.
  • Sprinkle with furikake seasoning before serving.
