  • 1/4 cup breadcrumbs (optional) Adds a crispy topping.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the zucchinis in half lengthwise and scoop out the center using a spoon, creating boats.
  • In a skillet, heat olive oil over medium heat. Add diced mushrooms and sauté until soft, about 5 minutes.
  • Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.
  • In a mixing bowl, combine the cooked mushrooms and spinach with ricotta cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.

Assembly

  • Stuff each zucchini boat with the spinach and ricotta mixture, pressing down gently.
  • If desired, sprinkle breadcrumbs on top of each stuffed zucchini for added crunch.

Baking

  • Place the stuffed zucchinis on a baking dish and cover with foil.
  • Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 5 minutes or until the tops are golden.
  • Remove from the oven and let cool for a few minutes before serving. Garnish with fresh basil if desired.
