Ingredients
  

For the Pudding

  • 1 cup boiling water Essential for soaking the dates.

  • 1 2/3 cups all-purpose flour Provides structure to the pudding.
  • 1 1/2 tsp baking powder Helps pudding rise.
  • 1 tsp baking soda Adds lightness and softness.
  • 1/4 tsp salt Enhances overall flavors.

For the Toffee Sauce

  • 1/2 cup heavy cream Crucial for the toffee sauce.
  • 1/2 cup butter Enhances creaminess.
  • 3/4 cup packed light brown sugar Creates the caramel sauce.
  • 1 pinch salt Balances the sweetness.
  • 2 tsp vanilla extract Adds warmth and aroma.

Optional Topping

  • Chopped walnuts For added crunch and texture.

Instructions
 

Preparation

  • Preheat your oven to 350°F. Grease a 9x13 pan with butter.
  • Pour boiling water over the chopped Medjool dates in a bowl and let them soak for 10 minutes.
  • In a mixing bowl, beat the room temperature butter and light brown sugar together until fluffy, about 3-4 minutes.
  • Add eggs, vanilla extract, and molasses to the butter mixture. Beat until well combined.
  • In a separate bowl, whisk flour, baking powder, baking soda, and salt.
  • Mash the softened dates with the soaking liquid to create a chunky puree.

Baking

  • Gradually incorporate the dry mixture and date mixture into the butter mixture, stirring gently until just combined.
  • Pour the batter into the prepared pan and spread it evenly. Bake for 30-35 minutes.

Toffee Sauce

  • While the pudding bakes, prepare the toffee sauce by combining heavy cream, butter, brown sugar, and a pinch of salt in a saucepan over medium heat. Stir frequently for 5-7 minutes.
  • Once the sauce thickens nicely, remove from heat and stir in vanilla extract.

Serving

  • Serve warm slices of pudding drizzled with hot toffee sauce, optionally topped with chopped walnuts.

Notes

Serve immediately for a warm experience; it tastes incredible the next day too. You can also prepare the pudding and sauce ahead of time and reheat before serving.
