For the Cake

  • 1.5 cups all-purpose flour light and airy, the foundation of your cake
  • 0.5 cups granulated sugar sweet crystals that enhance the flavor of the cake
  • 2 teaspoons baking powder for that perfect rise and fluffy texture
  • 0.5 teaspoon salt to balance the sweetness
  • 0.25 cups cold butter cut into pieces, adding richness and moisture
  • 0.5 cups milk creamy and soothing, uniting all elements together
  • 1 large egg for binding and adding richness
  • 1 teaspoon vanilla extract providing warm, aromatic notes

For the Strawberries

  • 2 cups fresh strawberries sliced, bursting with juice and vibrant color
  • 0.25 cups sugar (for macerating berries) drawing out their natural sweetness

For the Whipped Cream

  • 1 cup heavy whipping cream fluffy perfection for layering
  • 2 tablespoons confectioners' sugar adding a touch of sweetness for the cream
  • 0.5 teaspoon vanilla extract (for cream) deepening the flavor profile

For the Strawberry Sauce

  • 0.5 cups strawberry preserves for that irresistible fruity finish
  • 2 tablespoons water creating a luscious strawberry sauce

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and grease an 8-inch cake pan to prevent sticking.
  • In a mixing bowl, combine the flour, sugar, baking powder, and salt. Stir until well mixed.
  • Cut the cold butter into the dry ingredients using a pastry cutter or your fingers until it resembles coarse crumbs.
  • In another bowl, whisk together the milk, egg, and vanilla extract until well combined. Pour this mixture into the dry ingredients and stir gently until just combined.
  • Spread the batter evenly in the greased cake pan and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool on a wire rack.
  • While the cake cools, toss the sliced strawberries with 1/4 cup sugar and let them sit for at least 30 minutes to macerate.
  • In a mixing bowl, beat the heavy whipping cream with the confectioners’ sugar and vanilla extract until soft peaks form.
  • In a small saucepan, heat the strawberry preserves with 2 tablespoons of water until syrupy.
  • Once the cake has cooled completely, slice it in half horizontally and layer with whipped cream and macerated strawberries.
  • Finish off with more whipped cream, remaining strawberries, and drizzle with strawberry sauce.

Notes

Make sure your butter is cold for flaky texture. Don’t overmix the batter; a few lumps are fine. Allow strawberries to macerate long enough to create a juicy layer. Whip the cream until soft peaks form for the perfect texture.
