For the Strawberry Sauce

  • 1.5 cups fresh or frozen strawberries, hulled These strawberries are the star of the dish.

For the Crust

  • 1.5 cups graham cracker crumbs Forms the perfect base for the cheesecake.
  • 0.33 cups granulated sugar Enhances flavor of the crust.
  • 0.5 cups unsalted butter, melted Adds richness to the crust.

For the Cheesecake Filling

  • 24 ounces cream cheese, softened Primary ingredient for a decadent filling.
  • 1 cup granulated sugar Balances the tanginess of cream cheese.
  • 3 large eggs Provides structure to the cheesecake.
  • 1 teaspoon vanilla extract Adds depth to the flavor profile.

Instructions
 

Make the Strawberry Sauce

  • In a small saucepan over medium heat, combine the strawberries, sugar, and lemon juice. Cook until the strawberries soften and release their juices.
  • Puree the mixture until smooth, then add the cornstarch slurry to thicken. Set aside to cool.

Prepare the Crust

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until well combined.
  • Press the mixture into the bottom of a springform pan to form an even layer.
  • Bake for 8-10 minutes until lightly golden, then remove and allow to cool.

Create the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese with sugar until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition.
  • Blend in the vanilla extract, sour cream, and heavy cream, being careful not to overmix.

Assemble the Cheesecake

  • Pour the cream cheese filling over the cooled crust.
  • Dollop the cooled strawberry sauce over the top and use a knife to swirl it into the filling.

Bake

  • Carefully place the cheesecake in a water bath to help keep it moist as it bakes.
  • Bake for 55-65 minutes until the edges are set but the center still has a slight jiggle.
  • Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

Chill

  • Remove the cheesecake from the water bath and refrigerate for at least 6 hours, preferably overnight.

Serve

  • Slice into portions and serve with additional strawberry sauce or fresh strawberries on top.

Notes

For best flavor, allow the cheesecake to chill overnight. Make sure your cream cheese is softened to room temperature before whipping, and don’t skip the water bath to prevent cracking.
