Preparation

  • Wash and chop the rhubarb into 1/2 inch pieces.
  • In a large pot, mix the chopped rhubarb, granulated sugar, and orange juice. Stir well.

Cooking

  • Place the pot over medium heat, stirring occasionally until the mixture bubbles and the sugar dissolves (about 5-7 minutes).
  • Add lemon zest, vanilla extract, ground ginger, and salt. Stir to combine.
  • Lower the heat and let the jam simmer for 20-25 minutes, stirring occasionally.
  • To check if the jam is ready, drop a spoonful onto a chilled plate; if it wrinkles when pushed, it’s ready.
  • Remove from heat, allow to cool slightly, then transfer into sterilized jars, leaving half an inch of space at the top.
  • Seal and let cool completely.

Notes

Use fresh ingredients for optimal results. Sterilize jars and be patient; don’t rush the simmering process for the best consistency.
