Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare your baking pan by greasing and lining it with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, and salt to ensure even distribution.
  • In another bowl, beat together the softened butter and granulated sugar until fluffy and light in color.
  • Add eggs, vanilla extract, and milk to the butter mixture and mix until combined.
  • Gradually fold in the dry ingredients into the wet mixture until just combined.
  • Gently fold in the dried fruit mix, candied cherries, and chopped nuts.

Baking

  • Pour the batter into the prepared pan and sprinkle extra nuts and fruits on top if desired.
  • Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for a few minutes before transferring to a wire rack to cool completely.
