Ingredients
  

Crust

  • 2 cups graham cracker crumbs Gives a buttery, crumbly base

Caramel Sauce

  • 1 cup sugar For the homemade caramel
  • 1/2 cup water
  • 1/2 cup salted butter
  • 1 cup heavy cream

Toppings

  • 1/4 cup pecan chips For extra flair before serving

Instructions
 

Making the Caramel Sauce

  • Combine 1 cup of sugar and 1/2 cup of water in a saucepan over medium heat. Allow to bubble gently until the sugar turns amber.
  • Remove from heat and stir in 1/2 cup of salted butter and 1 cup of heavy cream. Set aside to cool.

Preparing the Crust

  • Mix 2 cups of graham cracker crumbs, 1/2 cup of melted salted butter, 3 tablespoons of brown sugar, and 1/4 cup of pecan chips until resembles wet sand.
  • Press into the bottom of a 9-inch springform pan.

Making the Filling

  • In a large bowl, beat 24 ounces of cream cheese until smooth.
  • Gradually blend in 1 cup of light brown sugar, 3 tablespoons of flour, 1 cup of sour cream, and 1 1/2 tablespoons of vanilla extract.
  • Add the 3 eggs one at a time, mixing gently after each.
  • Fold in 4 ounces of semi-sweet chocolate chips.
  • Pour the filling over the prepared crust and spread evenly.

Baking and Chilling

  • Bake in a preheated oven at 325°F for approximately 1 hour until set but slightly jiggly in the center.
  • Turn off the oven and cool inside for an hour before chilling in the refrigerator for at least 4 hours, preferably overnight.

Serving

  • Drizzle the cooled caramel sauce over the cheesecake.
  • Top with pecan chips and extra chocolate chips before serving.

Notes

For a quicker dessert, consider using store-bought crusts or pre-made caramel sauce. Ensure all ingredients are at room temperature for smooth mixing.
