  • Spread the sweet potatoes in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and caramelized.

Dressing

  • While the sweet potatoes roast, whisk together apple cider vinegar, Dijon mustard, honey, cumin, and paprika in a small bowl.
  • Gradually drizzle in ¼ cup of olive oil while whisking to emulsify the dressing.

Assembly

  • Let the roasted sweet potatoes cool for about 10 minutes.
  • In a large bowl, combine warm sweet potatoes, sliced red onion, cranberries, and parsley.
  • Pour the dressing over the salad and gently toss to coat.
  • Fold in crumbled feta cheese.
