  • 4 cups day-old multi-grain bread, cubed Use stale bread for best results.

Custard Mixture

  • 2 tablespoons vegan butter For greasing the baking dish.
  • 2 tablespoons brown sugar or maple syrup Adds sweetness.
  • 6 tablespoons Just Egg (or 2 large regular eggs) Substitutes well for egg.
  • 1 cup plant-based milk Almond, soy, or oat milk work well.
  • 1.5 teaspoons vanilla extract Enhances flavor.
  • 1 tablespoon fresh orange zest Adds a citrus note.

Fruity Topping

  • 1 (10 oz) bag mixed frozen berries, thawed and drained Can include cranberries, blueberries, or raspberries.
  • Powdered sugar or maple syrup for serving Optional for garnishing.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with vegan butter.
  • Layer the cubed bread in the baking dish evenly.
  • In a mixing bowl, whisk together the Just Egg, plant-based milk, vanilla extract, brown sugar, and orange zest until smooth.
  • Pour the custard over the bread cubes and press down gently.
  • Scatter the thawed berries on top and let it rest for 15 minutes.

Baking

  • Dot with vegan butter and bake for 35-40 minutes until golden brown and bubbling.
  • Allow to cool for 10 minutes before serving with powdered sugar or maple syrup.

Notes

Make sure the bread is adequately stale for best results. Feel free to swap fruits or spices to customize. Use a baking dish lined with parchment paper for easier cleanup.
