Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine all-purpose flour, granulated sugar, cocoa powder, baking soda, and salt.
  • In a separate bowl, whisk together water, vegetable oil, vinegar, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined; do not over-mix.
  • Pour the batter into a greased 9-inch springform pan and bake for 25 minutes.
  • Let the cake cool completely on a wire rack.

Creamy Layer Preparation

  • In a mixing bowl, beat vegan cream cheese, granulated sugar, and vanilla bean seeds until smooth.
  • Gradually add flax eggs and vegan sour cream, mixing until fully combined.

Cheesecake Baking

  • Pour the cream cheese mixture over the cooled chocolate base.
  • Bake at 300°F (150°C) for 50-60 minutes.

Blueberry Layer Preparation

Whipping Cream

  • Gently fold in the blueberry mixture and gelatin.

Assembling the Cake

  • Pour the blueberry mousse over the chilled cheesecake layer and refrigerate until firm.

Ganache Preparation

  • Cook additional blueberries with cream until syrupy, strain the sauce.
  • Mix the strained sauce with chopped dark chocolate until smooth.
  • Pour over the set mousse layer and refrigerate until firm.

Use room temperature ingredients for a smoother batter. Allow cake layers to cool completely before assembling. If looking for healthier alternatives, consider using coconut sugar instead of granulated sugar, or whole wheat flour instead of all-purpose flour.
