Wet Ingredients

  • 3/4 cup unsalted butter, softened Velvety and creamy, creating a tender cookie.
  • 1/2 cup granulated sugar For sweetness and a beautiful texture.
  • 3 Tbsp granulated sugar, divided Used for rolling the cookie dough.
  • 1/2 cup packed light-brown sugar Adds a lovely caramelized flavor.
  • 1 large egg Binds the dough together.
  • 1/4 cup molasses Brings moisture and a rich depth of flavor.
  • 2 tsp vanilla extract For that warm, aromatic essence.

Chocolate Coating

Instructions
 

Preparation

  • In a bowl, whisk together the all-purpose flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg until well combined and aromatic. Set aside.
  • In a separate large mixing bowl, beat the softened unsalted butter, 1/2 cup of granulated sugar, and brown sugar until light and fluffy, ensuring all the sugar dissolves into the butter.
  • Add the large egg, molasses, and vanilla extract to the creamed mixture. Mix until everything is thoroughly combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined to prevent overworking the dough.
  • Cover the bowl with plastic wrap or a clean kitchen towel and refrigerate for about 1 hour to better flavor and structure.

Baking

  • Preheat your oven to 350°F (175°C).
  • Once chilled, scoop out portions of the dough, roughly 1 1/2 tablespoons each, and roll them into balls.
  • Roll the dough balls in the remaining sugar for a beautiful sparkle.
  • Place the cookie balls on lined baking sheets, flattening them slightly, and bake for 8-10 minutes, or until the edges are golden.
  • Remove from the oven and let the cookies cool on a wire rack.

Chocolate Dipping

  • In a microwave-safe bowl, combine the white chocolate chips and shortening. Heat in short intervals, stirring until smooth.
  • Once the cookies are cool, dip half of each cookie into the melted chocolate, allowing excess chocolate to drip off.
  • Using red and green candy melts or tinted royal icing, create festive decorations on top of the chocolate-dipped cookies. Set aside for the chocolate to harden.

Notes

Chill the dough before baking to prevent spreading. Allow cookies to cool before dipping in chocolate to maintain their structural integrity.
