Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare your cake pans by greasing and lightly flouring them.
  • In a mixing bowl, whisk together the flour, baking powder, and salt. Set this mixture aside.
  • In a large bowl, beat the softened butter and sugar together until light and fluffy.
  • Add the egg whites one at a time, beating well after each addition, and then stir in the vanilla extract.
  • Gradually alternate adding the dry ingredients and the whole milk to the butter mixture, beginning and ending with the dry ingredients.
  • Gently fold in the melted white chocolate into the batter.
  • Evenly divide the batter into the prepared cake pans.

Baking

  • Bake in your preheated oven for 25-30 minutes until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Frosting

  • In a saucepan over medium heat, combine sugar, butter, evaporated milk, and egg yolks. Stir continuously until thickened.
  • Remove from heat and stir in the vanilla extract, shredded coconut, and chopped pecans.
  • Allow to cool until thick enough to spread, then frost the cooled cakes generously.
