Dressing

  • 3 tablespoons coconut aminos A soy sauce alternative.
  • 3 tablespoons rice vinegar Tangy and light.
  • 2 tablespoons extra virgin olive oil Smooth and fruity.
  • 1 tablespoon toasted sesame oil Fragrant and nutty.
  • 1 clove garlic Aromatic and pungent.
  • ½ inch piece fresh ginger Spicy and invigorating.
  • ½ teaspoon black pepper Subtly spicy.
  • ¼ teaspoon sea salt Enhances the flavors.

Instructions
 

Make the Dressing

  • Blend the medjool dates, garlic, and ginger in a food processor until smooth.
  • Add the coconut aminos, rice vinegar, olive oil, toasted sesame oil, black pepper, and sea salt. Blend until velvety.

Prepare the Vegetables

  • Wash and chop the romaine lettuce, and shred the red cabbage and carrots into thin strips.

Assemble the Salad

  • In a large bowl, combine the chopped romaine, shredded cabbage, and carrots.
  • Add diced chicken, chopped dates, sliced almonds, and green onions. Toss gently.

Dress the Salad

  • Pour the prepared dressing over the salad mixture and toss to coat evenly.

Let It Rest

  • Let the salad sit for 5-10 minutes before serving to allow flavors to meld.
  • Garnish with sesame seeds just before serving if desired.
