Preparation

  • Wash the zucchini under cool running water. Thinly slice them lengthwise, about 1/4 inch thick. Sprinkle the slices with salt and let them sit for 10-15 minutes to draw out excess moisture. Pat dry with paper towels.

Cooking the Turkey Mixture

  • In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until fragrant, about 3-4 minutes. Then add ground turkey, breaking it up. Season with salt, pepper, and Italian seasoning. Cook until browned and cooked through, about 5-7 minutes. Stir in marinara sauce and let simmer for 5 minutes.

Layering and Baking

  • Preheat the oven to 375°F (190°C). In a baking dish, layer the ingredients: start with a ladle of turkey mixture, followed by zucchini, ricotta, and mozzarella. Repeat layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
  • Cover with aluminum foil and bake for 30 minutes. Remove foil and bake uncovered for another 10-15 minutes until cheese is bubbly and golden. Let rest for 10 minutes before serving.

Notes

Ensure zucchini is firm and salt them to remove excess moisture. Resting time after baking helps with slicing. Adjust layering to avoid sogginess.
